Ingredients:

hard boiled eggs shelled - 4boiled mashed potatoes - 4small onion chopped fine - 1garlic peeled & chopped - 2 clovescarrot chopped - 1/4 cupcooked peas - 1/4 cupfresh corriander leaves chopped - littlesalt & pepper to taste - raw egg beaten - 1bread crumbs - oil for frying -

Method:
Throughly mix mashed potatoes, onion, garlic, carrot, peas, salt, pepper & corriander leaves. Encase each egg in a layer of this mixture. Coat each cutlet in raw egg, then roll it in bread crumbs. Fry till browned. Cut into half & serve with salsa, ketchup or mayonnaise
