Scotch Eggs

Ingredients:

  • hard boiled eggs shelled   -   4
  • boiled mashed potatoes   -   4
  • small onion chopped fine   -   1
  • garlic peeled & chopped   -   2 cloves
  • carrot chopped   -   1/4 cup
  • cooked peas   -   1/4 cup
  • fresh corriander leaves chopped   -   little
  • salt & pepper to taste   -  
  • raw egg beaten   -   1
  • bread crumbs   -  
  • oil for frying   -  
  • Method:

    Throughly mix mashed potatoes, onion, garlic, carrot, peas, salt, pepper & corriander leaves. Encase each egg in a layer of this mixture. Coat each cutlet in raw egg, then roll it in bread crumbs. Fry till browned. Cut into half & serve with salsa, ketchup or mayonnaise
