Apricot & Date Chutney

Ingredients:

  • Dried apricots   -   500g
  • Sultanas   -   1½ cups
  • White wine vinegar   -   1½ cups
  • Brown sugar   -   1¾ cup
  • Chopped dates   -   250g
  • Preserved ginger chopped   -   1/3 cup
  • Water   -   1 cup
  • Salt   -   1 tbsp.
  • Mustard seeds   -   1 ½ tsp.
  • Chilli powder   -   1½ tsp

Method:

Cover apricots with water & leave to soak 1 hour, then drain. Place in a pan with the sultanas & vinegar, bring slowly to the boil & simmer for 15min. Stir in the remaining ingredients & simmer until thickened. Pour into hot sterilised jars & seal then label.
