Ingredients:
- Dried apricots - 500g
- Sultanas - 1½ cups
- White wine vinegar - 1½ cups
- Brown sugar - 1¾ cup
- Chopped dates - 250g
- Preserved ginger chopped - 1/3 cup
- Water - 1 cup
- Salt - 1 tbsp.
- Mustard seeds - 1 ½ tsp.
- Chilli powder - 1½ tsp
Method:
Cover apricots with water & leave to soak 1 hour, then drain.
Place in a pan with the sultanas &
vinegar, bring slowly to the boil & simmer for 15min.
Stir in the remaining ingredients & simmer until thickened.
Pour into hot sterilised jars & seal then label.
