Pistachio Ice Cream

Ingredients:

  • Pistachios   -   1/2lb
  • Milk   -   2/3 cup
  • Light cream   -   1 cup
  • Sugar   -   3 tablespoon
  • Salt   -   A pinch
  • Rose water   -   1 teaspoon

Method:

Grind the pistachios in a little of the milk by hand, gradually adding the rest of the milk. Add the cream, sugar and salt and mix throughly. Place the mixture in a saucepan and cook over a moderate heat for 10 minutes, stirring constantly. Remove the pan from the heat and leave to cool. Pour the cooled mixture into the containers and freeze for a minimum of 1 hour. Serve straight from the refrigerator, and sprinkle with rose water.
