Coconut rice

It is easy to make. It can be served for brunch.Kids would enjoy as the dish is not very spicy.

Ingredients:

  • Rice   -   3 Cups
  • Grated coconut   -   11/2 Cups
  • Urad dal   -   2 Tab spoon
  • Channa dal   -   2 Tab spoon
  • Cashew nuts   -   6
  • Green chilies   -   5
  • Cumin seeds   -   1 Tea spoon
  • Curry leaves   -   Few
  • Gee   -   1/4 Cup
  • Salt to taste   -  
  • Method:

    Cook the rice in 5 cups of water such that the cooked rice is not sticky. Allow it to cool.Cut the green chilies into half,leangthwise.Heat gee in a pan.Add cumin seeds, urad dal, channa dal and cashew nuts. Fry till turns brown. Add green chilies and curry leaves. Fry for few seconds. Add grated coconut and fry for 5 minutes. Take a wide vessel and sprade the cooked rice into a layer. Make another layer of coconut mixer on top of rice layer. Sprikle the salt to taste and mix it well. Serve with pappad or chips.
