Carrot Rice

Ingredients:

  • Basmati Rice   -   1cup
  • Carrots   -   1/2 kg
  • Onion   -   2 large
  • Red Chilies   -   4
  • Coriander Seeds   -   1.5 tsp.
  • Jeera   -   3/4 tsp.
  • Peanuts   -   2tbsp

Method:

Cook Basmati Rice separately. Scrape Carrots and dice onion into pieces. Fry red chillies,coriander seeds and jeera and 2tbsp scraped coconut in little oil and make it into fine powder. Heat oil, add cinnamon and 3 cloves. After a minute add diced onion and cook for 5 minutes. Add scraped carrots and cook until raw smell is gone. At this point add salt to taste and powdered masala. Fry for one more minute and add cooked rice. Fry the peanuts and make into coarse powder. Add this to rice at the end. This recipe is very simple and very tasty.
