Gosht Biryani

Me and my husband like this taste biryani very much.So I want to share this recipe .Now there is no more secrete for a taste biryani.Don’t forget to read it carefully.Expecting reviews. remaining ingrediants i add before the method.

Ingredients:

  • 500gms   -   mutton
  • 400gms   -   onion
  • 8tbsp   -   youghrt
  • 250gm   -   refined peanut oil
  • 2tbsp   -   ginger-garlic paste
  • 500gm   -   basmati rice
  • 1   -   lemon
  • 4-5   -   almond
  • 4   -   Cinnamon sticks
  • 6-8   -   Cardamon
  • 2-3   -   Green Chilies
  • qtr tbsp   -   Qtr tspn Saffron
  • 6 table   -   spoon Milk
  • 2   -   tomato
  • half tbsp   -   garam masala
  • Method:

    § Half tspn Black Zeera § 6-8 Cloves § Half tsp Garam Masala § Salt to taste § Half tbsp Sugar § Qtr Kewada Or Rose essence § Fresh Mint Leaves,Coriander and Fried Onions to Garnish Garam Masala is equal amounts of Black Zeera, Cardamon & Cinnamon sticks, with half amount of cloves ground to a fine powder. method 1) In a large bowl mix the meat, first Garam Masala with hands then yoghurt, allmonds, chopped green chillies, ginger and garlic paste, & 1tb lemon juice,&salt.To the mixture add half a teaspoon each of chilli powder and turmeric& qtr tbsp Sugar. Marinate for at least 4-6 hours in the fridge. 2) Fry the onions in oil until golden brown and crisp. Drain away any excess oiland then remove the onions and spread over a large plate. This should keep the onions crispy. Once they have cooled crush the onions with your fingers 3) After 4-6 hours boil that marinated mixter in a thick bottom bowl without lead .Reducing all mixture gravy to thick past that should coat the mutton pieces .Mutton will also be tender now.Do not add any exra water At any coast .Add two three drops of Kewada or Rose Essence. 4) When it will cool add fryed onion to the mixture.Mix with hands so that all fryed crushed onion should coat to that mutton pieces. 5) In a mixer bowl(blenber )make fresh tomato paste with very little sugar,salt& lemon juice. Take oil in a frying pan ,heat that oil & add tomato paste to that oil.Frying till it reduces to a very thick tomao gravy. Add this gravy to mutton mixture . 6) Soak rice 15 – 20 minutes in water. 7) Add 25 gm approximately oil .Heat oil &add 3-4cloves,2-3cardimon , 2 Cinnamon sticks,black cumin seed(shah jeera) and add water. When it will come to boil add 2-3 drops of kewada or rose essence qtr tbsp sugar & 1 tbsp lemon juice.Do not forget to add salt. (If the rice is four cups then add only three cups of water if u want rice grains should be separated.) 8) Drain out the rice &add it to the boiling water.cook it on high flame first the Medium flame without lead.cook till all the water should absorb by rice grain 9 ) take out half quantity of roce ,Level the remaing rice .Spread half mutton mixture over that rice add chopped coriander and chopped mint leaves.Now spread that remaining rice over mutton layer level it & spread remaining mutton mixture over it with chopped coriander and chopped mint leaves.Add saffron in warm milk & add to it. Seal it properly and cook it for 15- 20 minutes on very slow flame 10) Serve hot with dahi rayata.
