Curry Paste (East Indian)

Ingredients:

  • Coriander   -   6 tb sp.
  • Fennel   -   1 heaped tsp.
  • Cloves   -   1 heaped tsp.
  • Turmeric   -   1 heaped tsp.
  • Cumin   -   1 heaped tsp.
  • Fenugreek   -   1 heaped tsp.
  • Black pepper   -   1 heaped tsp.
  • Mustard seeds   -   1 tsp.
  • Garlic   -   3 cloves
  • Onion (large)   -   1
  • Red pepper   -   According to your taste

Method:

On a stone, grind first, adding enough water to make a stiff paste. Add all other ingredients by degrees, grinding very finely. Omit onion, garlic and red pepper if it is to be kept overnight.
