Baingan Bharta is a north Indian vegetable dish made of mashed Aubergines(also called Brinjal).
Ingredients:

Large purple aubergine/brinjal/Egg-plant - 1 (to serve 4 people)Green peas - 1 small bowlOnion - 2 small finely choppedGaram masala powder - 1/2 tspRed chilli powder - 1 tspFresh coriander leaves - 1 tbsp finely choppedTomato - 1/2Cooking oil - 1and 1/2 tbspSalt - to taste

Method:
Wash the aubergine, dry it and apply little oil on its outer side, and roast it on the gas flame, till it is tender from inside and the outer skin becomes hard and starts peeling off. Let it cool slightly and remove the peel and the stem completely and mash the inside of the aubergine and keep aside. For the mash to be uniform, you can grind it once fr 10 seconds in the grinder.
Heat oil in a wok, add the cooking oil, the garam masala powder, and the chopped onions, keep lid and fry till onions become pink. Add red chilli powder, keep lid, the green peas when the oil is seen around the edges of the onion, cover and let it cook till the green peas are cooked. Then add the mashed aubergine, add salt, cover and cook on low heat for about 10 minutes. Add chopped tomato and coriander leaves, cover and put off the heat.
While serving, garnish with fresh coriander leaves.
