Summer always brings with it mangos. Here is a delicious recipe that can be made with the mango fruit. It is popularly called gojju or vathakolambu. Ingredients:
Method:Wash, wipe and cut the unskinned mango into big pieces. Soak the tamarind in one and a half cups of water and extract juice. Heat one tablespoon of oil in a pan, first fry Assafoetida and then add fenugreek seeds and fry till golden brown. Cool the mixture, powder and set aside. Heat two tablespoon of oil in the same pan and add all the ingredients for seasoning. When the dhal turns golden brown, add curry leaves, mango pieces and mango seed. Saute for sometime then add one cup of water and allow the mango pieces to cook for a few minutes. Add tamarind, jaggery, turmeric powder and salt. Let it boil for sometime till the raw flavour disappears. Add sambar powder and the powdered mixture of Assafoetida and fenugreek seeds. Mix the rice or corn flour in two tablespoon of water and add to the gojju to thicken it. Add the remaining oil and let it simmer on low heat for a few minutes. Serve hot with rice and ghee. |
